Cooking will be scarce for me in the next couple months because my family and I are moving and I just started a new semester of college. Hopefully I’ll be able cook here and there… it is my therapy, and right now I feel like I desperately need it.

Pulled Pork Hoagies with a Fried Egg on top
Tonight’s Dinner…
Ok, I know I’m posting back to back, but I couldn’t wait to post this!
Yesterday, I made pulled pork shoulder in my crock pot, then I split it up to utilize in a few meals. Tonight, I made my home-made barbecue sauce, (momma’s secret recipe) and added it to the meat to make a delicious meal. When I was cooking tonight, I thought something was missing. What makes everything better?
Oh yeah… a fried egg, of course.
Last night’s dinner…

First, I cooked some bacon in a 12-inch skillet. Then I cooked onions, Hatch chiles, mushrooms, and garlic in the bacon grease.

Then I shredded up some Asadero cheese. If you haven’t tried it- go try it. It’s so creamy and melts perfectly. It’s Mexican food’s bestie.

I used the cheese as the glue to hold it together. A layer on bottom… then layer veggies and bacon… then another layer of cheese… then the top tortilla. Fried it up- and there ya go- an omnom worthy quesa-dilla! ;) Served it with some spicy sour cream dip. Such a wonderful dinner.
Hatch Chile Fever!
This past weekend was a good weekend for food.
Central Market is having it’s Hatch Chile Festival this week. For those of you unfamiliar, hatch chiles come from Hatch, New Mexico. They are famous for their distinct rich flavor. When I heard about the festival I was excited to buy some fresh ones to roast so I could make a variety of chile dishes over the next couple weeks.
When I walked up to Central Market, you could smell the peppers from 100 yards away. They were roasting them outside! When you walk into the store they had giant shelves of the peppers that had just been roasted outside.
Well hell yes, I was gonna buy the chiles that were already roasted. Roasting peppers can be a pain when you don’t have a grill or gas stove (and anytime I use my broiler it somehow sets off the smoke alarm). So I bought this lovely container of roasted Hatch chiles, and I have already made several meals with them. I wanted to post all my pictures at once, but I guess that leaves little to be desired from my readers. :)
